For those who aren’t into speed-clogging their arteries, I want to make it clear that poutine is, literally, a dish that takes French fries, tops them with cheese curds, and finishes them off with a ladle full of gravy. And note that Steven Brown is the chef who once gave me a tour of the kitchen at Levain and insisted I take a sprig of just-picked microgreen and savor it, so I would know how good food is supposed to taste.
